The Department of Food Science (FOOD), Faculty of Science, University of Copenhagen invites applications for a position as Associate Professor within the area of plant based food biotechnology and processing. The Department wishes to fill the position by 1 August 2020 or as soon as possible thereafter.


The research within the Department of Food Science has the mission to contribute with new solutions for society and industry in order to support sustainable food production, food security and safety as well as production of high-quality food promoting human health and wellbeing. The Department of Food Science is recognized for excellence in food research, education, and industrial collaborations. The Department is an international workplace with English as primary working language.


Plants and algae are sustainable sources of nutritional and healthy food. Plant based food biotechnology and processing is an expanding research area that explores chemical and biochemical approaches for extraction, separation, and processing of plants and algae to harness their content of proteins, lipids, and carbohydrates as well as minerals, vitamins and phyto-nutrients. This requires an in-depth understanding of the basic composition of plant and algal cells and tissues as well as biochemical approaches, including enzymatic treatment, for fractionation or refining using advanced separation and analytical platforms. A major focus is protein and carbohydrate quality and composition, protein and carbohydrate structure in context of digestibility, texture and functionality. Modifications of major food components (i.e. glycosylation, phosphorylation etc.) are therefore interesting as is the identification and removal of anti-nutrients. Research results from plant based food biotechnology and processing will have a direct impact on consumers, the food industry, and society. The expectations are that plant and algal based foods will be an effective source for developing future healthy foods. The research is also a key player in achieving sustainable food production and is therefore expected to have a major impact on the circular economy of the future.


The position

You will become part of Section of Ingredients and Dairy Technology at Department of Food Science in a successful and growing research group in which we offer you an attractive position where you can develop your own research focus. We expect you to have a background in food-, biological-, engineering- or biochemical sciences with strong interest in plant based food biotechnology, sustainable postharvest food production and valorisation of side-streams. You should be highly skilled in biotechnological approaches for food processing like extraction, fractionation and application of chemical or biochemical, hereunder enzymatic, approaches for transformation of plant or algal raw material to foods. Research experience in processing, application of biochemical and enzymatic approaches for analysis and separation of major food constituents and anti-nutritional components preferably from plant sources are needed requirements. Research experience with analytical tools for characterization of proteins or carbohydrates will be regarded as an additional advantage. The candidate must actively contribute with teaching to the BSc in Food Science and the MSc in Food Science and Technology programs.


The candidate must have the following qualifications:

  • Research qualifications at the level that can be achieved by satisfactorily completing a period of employment as an assistant professor, but may also be obtained in other ways.
  • An outstanding publication record in food biotechnology preferably with approaches to process, fractionate and characterize plant based food sources.
  • Pedagogical competencies and a proven track record of research-based teaching, including the creation and running of undergraduate and postgraduate courses.
  • Experience in supervising Bachelor, Master’s and PhD students.
  • A proven track record in attracting external funding at both national and international level
  • Excellent team and project management skills, including the management of major international collaborative research projects.
  • Ability to develop collaborative research project ideas. 
  • A collaborative and innovative mind set.
  • Successful track record in industry collaboration (and understanding of how to meet the project goals through fruitful university-company collaboration).
  • Excellent interpersonal and communicative skills.

Applicants are required to have university level teaching experience, documented teaching competencies and must be able to explain and reflect upon own teaching practice and portfolio. Formal pedagogical training or supervision equivalent to the University of Copenhagen teacher training programme for assistant professors is required.


Duties include the applicant’s own research, development of the field, assessment tasks, grant applications, and research management such as supervision and training of research fellows and other staff. The successful applicant must also teach, supervise, prepare and participate in examinations, and fulfill other tasks requested by the Department.


Assessment of applicants will primarily consider their level of documented, original scientific production at an international level, including contributions to developments in their field, as well as their documented teaching qualifications. Managerial and out-reach qualifications of applicants including ability to attract external funding will also be considered.

Terms of employment
The position is covered by the Memorandum on Job Structure for Academic Staff.


Terms of appointment and payment accord to the agreement between the Ministry of Finance and The Danish Confederation of Professional Associations on Academics in the State.

Commencing salary is currently for Assoc. Professor – up to DKK 477.721 including annual supplement (+ pension up to DKK 81.690).


Negotiation for salary supplement is possible.
